Just specify the volume, specific gravity, and (optionally) titratable acidity of your juice. Then tell the wizard what you would like the specific gravity and titratable acidity to be. If you know the titratable acidity of the juice, enter that as well. Note that if you don&#8217;t enter the juice TA, then you can&#8217;t enter the desired TA of the must because the wizard won&#8217;t be able to figure out how to get there from here. How can it if it doesn&#8217;t know where &#8220;here&#8221; is? Next enter the desired specific gravity of the must and, optionally, the desired TA.
